I wanted to share this smoothie recipe I tried out today. I was going to give the kids ‘some’ of it along with their lunch and then use the rest to fill up a few popsicle molds….well, that didn’t happen! It was all GONE in about 5 minutes. I guess they liked it! (I had a glass too…yum!)
I purchased this mint plant when I bought my tomato and bell pepper starts several weeks ago and it’s just been sitting next to my sink ever since. Besides keeping it watered and trimming it back a bit, I haven’t used it for anything…until today.
I saw a recipe for “blackberry, banana, mint smoothies” on the website www.eatgood4life.com and thought it sounded really good. I didn’t have any blackberries or almond milk on hand, so I adapted the recipe quite a bit and came up with my own.
Blueberry, Banana, Mint Smoothie

- 1 cup milk (I use organic whole)
- Fresh mint leaves (I used 8, I think)
- 1 cup Greek yogurt
- 1 cup fresh organic blueberries
- 2 frozen bananas
- 2 T honey (I will probably try it with 1 T next time)
Put milk and mint leaves in the blender and blend for a few seconds. Then add the remaining ingredients and blend until smooth. Enjoy!

These are the smoothie straws we just started using. We LOVE them! They’re easy to clean and they stop us from throwing away plastic straws every day!
My husband and I took the kids to Hilger’s Family Farm again on Sunday to pick more strawberries. We now have 15 jars of freezer jam in our basement freezer (plus three bags of frozen berries)!! I had some on my vanilla bean ice cream over the weekend…delicious!
