Lime-Marinated Chicken Quesadillas

I made this for dinner last night. I was happy with how the quesadillas turned out, but I definitely did something wrong with the rice. Not good. šŸ™ Sometimes I don’t know if things turn out poorly because of something I did, or because the recipe just wasn’t a good recipe. Either way, the quesadillas were pretty good and, I think, worth sharing. šŸ™‚

CilantroĀ LimeĀ Brown Rice

Lime-Marinated Chicken Quesadillas

(Recipe Adapted from: The Everything Whole Foods Cookbook, by Rachel Rappaport)

Ingredients:

  • 2 T olive oil
  • 1/3 cup fresh lime juice
  • 4 cloves garlic, chopped
  • 1 onion, chopped
  • 1 tsp salt
  • Sprinkle of black pepper
  • 1 pound of boneless chicken breasts, cut into thin slicesĀ (I buy local, free range from Seven Sons Family Farm)
  • 6 ounces frozen spinach, defrosted and drainedĀ (I used fresh organic spinach)
  • 8 whole wheat tortillas (I buy mineĀ from Whole Foods)
  • Cheese, freshly shredded

Place the olive oil, lime juice, garlic, onion, salt, pepper and chicken into a resealable bag and mix together. Let marinate in the fridge for 2-8 hours.

Add the contents of the bag into a skillet over medium heatĀ and cook until chicken is done. Add the spinachĀ and stir until wilted. Next, butter one side of each tortilla and add the filling and cheese to the center. I have a quesadilla maker, but if you don’t have one, you can just cook them in a larger skillet or on a griddle. Cook until slightly browned. Cut and serve.

I served ours with Cilantro Lime Brown Rice. I’ve heard brown rice can be tricky to cook “just right”…and I’m thinking that could have been part of the issue here. Plus, the recipe stated I should let it cool first before adding the lime juice, but my quesadillas were done and my kids were hungry…so I went for it. I didn’t have 30 minutes to let it just sit there! So, who knows where it went wrong, but the flavor was bad and the texture was mushy. Not impressed at all. I guess I’ll justĀ have to keep searching for new brown rice recipes that pair well with quesadillas.
