I’m not a big salad eater. I like them well enough, but I rarely order one if I go out to dinner and we only have salad at home once every few weeks. I’ve mentioned on here before that I’ve been experimenting making my own salad dressings (since the store-bought versions are full of artificial ingredients). Well, it’s safe to say that I’ve found at least one dressing that I really like! It’s my own creation. I call it my “Apple Cider Honey Mustard Dressing.” Clever, huh? The “recipe” I’m sharing is for one serving only. I attempted to quadruple the amounts yesterday for our dinner so everyone could have it, but it didn’t taste near as tasty as when I just made it for myself (I think I added one tablespoon too much of oil and that threw the whole balance off). I’ll just share the one person ingredient amounts for now.
Apple Cider Honey Mustard Dressing (1 Serving)
- 3 tsp extra virgin olive oil
- 1 tsp apple cider vinegar
- 1/2 tsp Dijon mustard (I used Annie’s Natural’s Organic)
- 1/2 tsp honey
- 4 shakes of garlic powder
Whisk together or shake up. Pour over salad immediately or store in fridge until read to use.
I think this spinach salad was so delicious for a few other reasons as well. I added raw almond slices, raw sunflower seeds and homegrown cherry tomatoes. The almonds and seeds helped to fill me up and the cherry tomatoes provided great flavor. The overall combination of everything with this dressing was excellent and I highly recommend it! Even my daughter said (after I gave her a bite of mine), “Mmm…this is the best. salad. ever! Can you make this tonight??” I should add, though….that statement needs to come with a warning: She declares that “this is the best day EVER” with great frequency. About as much as “this is the WORST DAY EVER.” Gotta love 4 year old girls, right?!?!
I have the OXO Salad Dressing Shaker and use it quite frequently. You can mix, pour, and store all in one container!
