Ham & Cheese Roll-ups

I’ve been making these ham & cheese roll-ups for years now and it’s probably one of our favorite meals. They are so good and crazy-easy to throw together in a hurry. It looks like your basic roll-up, but I like toĀ add roasted red peppers and three types of cheeses. That’s how these go from plain to awesome! šŸ™‚ I hope you enjoy them as much as we do!

Ham & Cheese Roll-ups

Ingredients:

  • Whole wheat flour tortillas (I buy mine from Whole Foods)
  • Olive oil, for brushing
  • Parmesan cheese, freshly grated
  • Thinly-sliced deli ham (I buy theĀ Applegate brandĀ because it has no nitrates added)
  • Thinly-sliced provolone cheese
  • Roasted sweet red peppers
  • Mozzarella cheese, freshly shredded

Brush oil on one side of the tortillas. Sprinkle lightly with Parmesan cheese, add ham, provolone cheese, red peppers, and mozzarella cheese. Fold in the sides and roll up. Place them seam side down on a lightly greased baking sheet. Brush the outside of each roll-up with more olive oil and sprinkle with a little more Parmesan cheese. Bake at 425 degrees until roll-upsĀ just start to brown (around 9-12 minutes). Serve warm.

I made these roll-upsĀ for my in-laws when they were in town recently and servedĀ my favorite Spinach Salad with homemade Apple Cider Honey Mustard DressingĀ on the side. Man, I just love that salad!! And it paired great with the roll-ups.

I should note: my kids ALWAYS pull out the roastedĀ red peppers from their roll-ups and refuse to eat them…but they are definitely my favorite part!!
