Choco-Coco Almond Bites

Earlier this week, I posted a recipe for Coconut Almond Bites that used up some of the leftover pulp from making homemade almond milk.  I still had a little bit of pulp left and since the first batch of bites were long gone, I figured I would try that same recipe again but switch it up a bit.  This time, instead of the chocolate chips (which got hard in the fridge), I added cocoa powder.  And just as I expected, they were also a hit!  My daughter had one with breakfast and I ate two with my breakfast smoothie.  The original version was good, but these are better.  🙂


Choco-Coco Almond Bites


  • 1 – 1 1/2 cups almond pulp (leftover from homemade almond milk)
  • 1 1/2 cups unsweetened shredded coconut
  • 1 cup oatmeal
  • 1/3 cup almond or peanut butter
  • 1/3 cup maple syrup
  • 2 T cocoa powder

Mix all together and squeeze/roll into golf ball-sized balls.  Store in the fridge…easy peasy.  (If the mixture is too dry to form the balls, add a little more nut butter or maple syrup.)  Enjoy!  🙂
