Double Chocolate Banana Pancakes

I haven’t made pancakes for my kids in a little while and since my daughter doesn’t have preschool on Tuesdays, I had extra time to spend in the kitchen this morning.  I was going to make some Chocolate Coconut Pancakes, but as I started in, my creative side (which, I should note, is much smaller than my ‘practical, always-follow-directions’ side) took over a little and I decided to come up with a new recipe.  So, I’m now sharing these “Double Chocolate Banana Pancakes” with you.  They were very good and I definitely over-ate this morning!  These pancakes are made with cocoa powder, mini chocolate chips, and mashed bananas mixed right into the batter.  Yum!  All three kids and I thoroughly enjoyed them.  🙂

Double Chocolate Banana Pancakes

Ingredients:

  • 2 1/4 cups white whole wheat flour
  • 1/4 cup cocoa powder
  • 4 tsp. aluminum-free baking powder
  • 1/4 tsp. salt
  • 2 cups milk (I use organic whole)
  • 2 eggs (local, free-range is ideal)
  • 2 T coconut oil
  • 2 T pure maple syrup
  • 2 ripe bananas, mashed
  • 1/2 cup mini chocolate chips (I use Enjoy Life)

In a large bowl, whisk together the flour, cocoa, baking powder, and salt.  In a separate, microwavable bowl, melt the coconut oil.  Add 2 cups of slightly warm milk (so the coconut oil doesn’t harden back up), the eggs, and maple syrup.  Whisk together.  Mix wet with dry and then stir in the mashed bananas and chocolate chips.

Preheat a griddle to 325 degrees and pour 1/4 cup of batter onto the hot surface.  When the pancakes starts to bubble and the edges look dry, flip over and cook the other side. Serve with additional maple syrup and chocolate chips, if desired!  Yum!

As always, I love when we have extra pancakes leftover because then I freeze them for another day.  I let them cool completely and then store them in a container with a piece of wax paper in between each pancake.  When we’re ready to eat them, I just pull them out one at a time to pop into the toaster.  My kids love doing this (and I love how easy it makes breakfast time on busy mornings)!  In fact, I often times will double a batch, specifically, so I have leftovers to freeze!
