If you saw my Carrot Chia Smoothie post yesterday, you know that I’m trying to make more smoothies with veggies (and not just fruit). I need to broaden my vegetable selections, but this new smoothie is a start. I made this ‘Green Breakfast Smoothie’ for breakfast this morning for myself and my boys and we all loved it! The green comes from spinach, and this was, by far, the most spinach I’ve ever added to a smoothie. And the boys didn’t hesitate for a second before sucking down their entire cups. I love that my kids are still young enough that the idea of ‘green food’ doesn’t turn them off. They don’t associate green smoothies with healthy veggies. They just think, ‘Cool! Mom made green smoothies this morning!’ Of course, when they say it, it sounds like this: “You make green smoothies today? Me like green!” 🙂
Green Breakfast Smoothie
(Makes 2 servings)
- 1/4 cup 1-ingredient apple juice (only ingredient should be organic apples!)
- Organic spinach – fill the blender ALL the way to the top!
- Handful of frozen mango chunks
- Handful of frozen pineapple chunks
- 2-3 ripe bananas
- 1/2 cup Greek yogurt
- 2 T chia seeds
- Splash of milk, as needed, to achieve desired consistency (I used organic whole milk today)
Add the juice and spinach to the blender. Blend these two ingredients FIRST before adding anything else. This will help to break the spinach down to very small pieces. If you want, you can even add more spinach after the first batch (I did this today). Then add the remaining ingredients and blend until smooth. Pour and enjoy!
My daughter didn’t want one. She informed me that she doesn’t like smoothies anymore…but she does like pink ones. I guess I’ll have to come up with a pink one that has beets! 😉
I use a Ninja blender and it works great for all of my smoothies. I especially love that all of the parts are dishwasher safe so clean-up is super easy! And these are the smoothie straws we use. LOVE them. Before I bought these, I was throwing away 4 plastic straws every single time we had smoothies (which was several times a week). No more waste now! These clean up extremely easy and nothing ever gets stuck in them.
And this is what my life as a blogger has become… ha!
Oops! I was trying to move this charger over to ‘attempt’ to find better artificial lighting (right…) and my whole smoothie cup just dumped over. Don’t worry, though, I didn’t let all that goodness go to waste. I just scooped it back into my cup and ate it. 🙂 (I know my table is clean.) Taking pictures of our meals is tough right now because it’s dark outside during breakfast AND dinner time. Ugh. Between the dark, the ridiculously cold temperatures, and the crazy amount of snow we’ve gotten this winter (over 30 inches so far!)…I am so ready for winter to be over. I want to play outside with the kids EVERY day and I want to run again!! I promise I won’t complain about the heat even once this summer! 😉 (Though, I make no promises that I won’t complain about overly air-conditioned public places and restaurants…that’s another pet peeve of mine, but we can save that for another post!) Anyway, this Green Breakfast Smoothie was a hit with me and my kids. If you’re looking for a way to add more spinach to your diet, this is a great way to do it!
