Homemade Stuffed Crust Pizza

My husband loves stuffed crust pizza…but it’s not something we get very often (especially these days!) because it’s more expensive. On the few occasions that we order pizza out, we typically stick to the one-topping only deals. Well, a while back he asked me if I would try making a homemade stuffed crust pizza sometime. So, I did! It’s super simple and if you like stuffed crust, but don’t like all the artificial ingredients when you order pizza out, then this recipe / ‘how to’ is for you!

Stuffed Crust Pizza

I started with my basic Homemade Whole Wheat Pizza recipe:

Whole Wheat Pizza Dough

Ingredients:

  • 4 3/4 cups white whole wheat flour
  • 2 tsp salt
  • 1-2 tsp Italian seasoning
  • 2-3 tsp garlic powder
  • 1 1/2 cups hot water
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 1 T yeast

Add all the ingredients to the bread machine, then select the pizza, dough cycle.  My machine takes about 45 minutes.  When the dough is ready, spray the pizza pans lightly with an olive oil sprayer.  I prefer to roll my dough out on my counter first and then transfer to the pizza pans.  My dough is usually a little sticky, so I always have my white whole wheat flour handy to sprinkle on the counter and rolling pin. Once you transfer the dough to the pan, place half a stick of mozzarella cheese (cut lengthwise) all around the border of the pizza (leaving excess dough hanging over the edge of the pan).

Roll the dough over the string cheese (stretching a little) and then seal it as best you can with a fork. Spread the pizza sauce to the edges, sprinkle the cheese on top, and add whatever toppings you’d like.

I bake mine at 400 degrees for approximately 10-12 minutes (until the crust looks done and the cheese starts to brown a bit). You’ll want to serve this pizza right away so the cheese in the stuffed crust stays nice and melted.  🙂

You’ll probably have some leftover dough (unless your pizza pan is extremely large or you use a rectangular baking sheet).  I usually make a second, smaller pizza to freeze for another day.  If you do this, make sure you bake the crust FIRST (before adding any toppings) at 400 degrees for 6 minutes.  Let cool.  Then spread on your sauce, cheese, and toppings.  Wrap tightly with plastic wrap and freeze. When you’re ready to eat your frozen pizza, just place it (still frozen) into a preheated oven at 400 degrees for about 12 minutes or so.

So, now I can say I made my husband a stuffed crust pizza! I don’t know if this is something I’ll do very often, mostly because pizza has enough cheese as it is…BUT, for the occasional ‘treat,’ this would be something fun to make! Enjoy!

Oh..and P.S. – If you haven’t tried this pizza dough yet, it is really, really good! My daughter even likes to tell me that my homemade pizza is better than what daddy gets when he goes to pick it up! Wow–I will take that compliment!!
