This Beet & Deep Greens Smoothie is great because it’s filled with so many veggies, but still tastes really good. So good, in fact, that one of my three year old boys asked for seconds (when I gave him a full cup to begin with)! It’s also quite filling, too! We had these for lunch today along with some homemade bread with butter. Of course, you could eat this for breakfast, too, but I’ve been on an ‘overnight oats’ kick lately so I have no room for smoothies after I’m done eating that!
When I shopped at Costco over the weekend (it was my first time!), I was really excited to find prepackaged, COOKED, organic beets. I knew they would be great to add to our smoothies, as well the chard, kale, and spinach mix that I also found at Costco.
Beet & Deep Greens Smoothie
- 1 cup organic whole milk
- Fill blender with organic greens (I used a chard, kale, and spinach mix)
- 1/4 cup Greek yogurt
- 1 cooked beet
- 1 frozen banana
- 2 handfuls of frozen organic berries (I used blackberries and raspberries)
- 1 T chia seeds
- 1 T raw honey (optional)
Blend the milk and greens first. Then add remaining ingredients and blend until smooth. Add more milk, if necessary, for a smoother consistency. Serve and enjoy!
I’m pretty sure I would have a tough time getting my kids to eat beets, spinach, chard, or kale if it were sitting on a plate, so this smoothie is definitely a ‘win’ when it comes to getting some extra veggies into their systems (and mine)!
We always use these stainless steel smoothie straws. They are truly awesome because they eliminate plastic straw waste and are easy to clean. And as much as we make smoothies in our house, those are really important features!
