I had this Blueberry Pecan Salad with Organic Blueberry Salad Dressing for dinner tonight. I wasn’t expecting much from it, but I actually really liked it! I’m still in phase 1 of my LEAP eating plan, so I have very limited amount of foods to choose from every day, but I was excited to come up with this salad dressing that’s a little bit ‘different,’ but still quite tasty. Plus, blueberries are in season right now and my husband found organic blueberries that were 3 for $5 at Meijer…so he loaded up! We’ll probably eat most of them fresh because we love them so much, but I may decide to freeze some for later, as well.
- 1 cup organic blueberries
- 2 T organic extra virgin olive oil
- 1 T organic apple cider vinegar
- 1 T maple syrup or honey
- ⅛ tsp salt
- Puree blueberries in blender.
- Add remaining ingredients and blend together.
- Pour over salad.
For the salad portion, I used organic green leaf lettuce for my base. I sprinkled on pecans and blueberries and topped with the organic blueberry salad dressing! Simple, tasty, and obviously quite healthy. 🙂 Enjoy!
