Chicken Tortilla Soup

I always love a simple crockpot recipe, don’t you? Now that my kids are in sports activities three nights a week and on Saturday mornings, I’m finding I need to utilize my crockpot more often now. I don’t have time to be cooking a meal during the normal dinnertime hours…and with homework for three kids (who all need my help) to try to squeeze into that small time slot…I’m a much saner mom if I do as much of the prep-work ahead of time as I can!

I recently made this Chicken Tortilla Soup recipe in my crockpot and it was incredibly simple, but also incredibly good. My kids loved it! I’ve shared a similar recipe in the past, but I had never actually cooked the chicken in the crockpot before, so this makes the meal even easier to prep and I’m certain I’ll never go back to the old method now!

My kids love to dip their tortilla chips into this thick soup, but you can also crush them up and mix them in (which is my preferred method)!

I used all organic items from Kroger’s Simple Truth product line, which makes this recipe something I can feel really good about feeding my family…especially because the recipe calls for several canned items. (If you don’t buy organic, make sure you check those ingredient labels for unnecessary additives!) I also made sure to buy free-range, organic chicken. This is something that is extremely important to me when it comes to feeding my growing kids. I don’t want them eating growth hormones and antibiotics!! I love that Kroger carries this option for us now. And, of course, I used my own homemade taco seasoning recipe, as well.

Chicken Tortilla Soup

Ingredients
  • 2 chicken breasts (free-range and organic is ideal)
  • 2 - 14 oz cans black beans, drained and rinsed
  • 28 oz can crushed tomatoes
  • 14 oz can tomato sauce
  • 2 T taco seasoning
  • 10 oz bag frozen corn
  • Organic tortilla chips
  • Shredded cheese (optional)
  • Avocado (optional)
Instructions
  1. Mix all ingredients together in crockpot and add chicken breasts on top.
  2. Cover and cook on low for 8 hours.
  3. When chicken is cooked through, simply shred with two forks.
  4. Serve in bowls with tortilla chips, shredded cheese, avocado, or sour cream.

When it’s all finished cooking, you’ll have this delicious taco soup!
